The most tender, choice cut as a steak or roast. Whole tenderloin roasts should be ordered in advance. This roast weighs about 4 pounds.
New York Strip Steak: $20.00 lb.
Pretty close to filet in tenderness, but larger.
Rib Steak: $16.00 lb.
Tender meat, more marbling and flavorful bone to gnaw on. A real steak lover's steak.

Sirloin Steak: $14.00 lb.
A great steak to marinate, grill, and serve cut into thin strips on a bed of fresh greens drizzled with olive oil. Sirloin is also good for making steak tartare when chopped.
Top Round Steak: $9.00 lb.
Prepared same way as sirloin steak.
Top Round Roast: $9.00 lb.
Makes a juicy and tender roast beef slow roasted till rare and sliced thin across the grain. Rub first with crushed garlic, salt, pepper, and soft butter. Sear in a hot over for 20 minutes, then slow cook at 200º until 110º internal meat temperature.
Carpaccio can be made from this top round when sliced thin (1/8") and pounded between sheets of parchment that have been brushed with good olive oil. Serve with arugula and slices of tomato and red onion.

Short Ribs: $7.00
Enjoy beef short ribs slow cooked. Short ribs are one of the tastiest cuts of meat. The bone adds a full beef flavor.
Brisket: $8.00 lb.
Excellent for braising with vegetables. Brisket can also be roasted with sweet barbecue sauce and shredded for sandwiches.
Flank: $12.00 lb.
There are only two of these tasty steaks per animal and they are very popular. Many use this cut for fajitas, but I love the Italian seasoned rolled meat my grandmother made stewed in tomato sauce called braciole.
Stew Beef: $6.00 lb.
Already cut and trimmed lean, this stew beef is ready for a slow liquid cook. We have found that taking time to sear and caramelize all of the stew ingredients heightens the intensity of the flavors to a new level. Serve with a fresh gremolata (chopped parsley, garlic, and lemon zest), hot crusty bread, and lots of butter. A meal to share with guests.
